DUM ALOO
INGREDIENTS
- 1 lb. small aloo(potato) 1/2 green or red chilly
- 1/2 cup curd or tomato puree
- Salt to taste
- oil to fry
- SPICES:
- 1/4 cup ground onion paste.
- 1/4 tsp. each haldi, chilly and dhaniya-zeera powder.
- 3tbs. finely chopped green coriander
- 1 tsp. ground ginger-garlic paste.
- METHOD
- Boil potatoes and peel. Heat the oil. Fry the onion paste till brown. Add ginger-garlic paste and fry for another minute. Then add yogurt or yogurt+tomato, salt to taste, haldi, mirchi and dhaniya-zeera powder. And fry till the oil separates from the masala. Add aloo and fry aloo in this masala in medium heat with a lid on for some more time (till you feel that aloo has all the masala coating).You have Aloo-dum without gravy. Add water If you want some gravy.
